Dear Mr Darwin,
I must simply ask you to forgive me for delay in replying to your last letter.2
I am still unable to answer the question and must ask for more time.
I find I have no note of any experiments with the fatty acids as to the digestion of gluten. As soon as the Laboratory is in order I will make some.3
We found before that although gluten was digested very slowly it was digested entirely with Pepsine & Hydrochloric acid.
